Castelo Branco Cheese


Also called shepherd of a herd of goats it is common all around the country, however the most famous is from Castelo Branco’s region, therefore its separate individuality. It has a very intense typical smell appraisers cal "God’s smell of dirty feet"; its flavour is very spicy. Before milk’s pasteurization, this kind of cheese could disseminate Malta’s fever. Today there’s no reason to fear this situation. It’s an artistic way cured cheese with a half-compact or half-soft paste, slightly yellow with a few holes, obtained after raw sheep’s milk coagulation, by infusion of "Cynara Cardunculus" thistle.
It shows an intact half-compact rind, smooth, and straw yellow uniform colour. Its smell and savour are typically strong.
