The creamy sheep cheese is one portuguese consumers favourite,
being a characteristically product of Beira’s Region.
Near Seia, in the mountainous zones, are localized the
most part of the flocks and the producers of this kind
of cheese.
Most of the times is very difficult to promote those
excellent cheese into a wider market, due to the little
dimension of the cheese-dairies, the little quantity
they produce and the fact that they’re made by workmanship.
Ten the so-called "assemblers" come and collect
the productions of two or three cheese-dairies to commercialize.
That’s the case of Creamy Sheep Cheese Lidador, a true
mountain sheep cheese produced in Seia zone. The best
way to preserve this kind of cheese is to keep it in
a cool, moist environment.
During
summer wrap it in kitchen paper and put it in the vegetables
place in the refrigerator. During winter you must avoid
the refrigerator and should put it in a ventilated kitchen
cabinet wrapped in a moist cloth and regularly turn it
upside down. To preserve the cheese for a long periods
we can always freeze it because its characteristics will
not change.
