In
the providence of Beira Alta is the delimited region of Dão,
that took this name after its
main affluent.
Three
zones are distinguished in this region: The best one, on Dão's
right bank; next, the one between Dão and Mondego and finally
the one on Mondego's left bank.
The
tipycal wine from Dão is the red one, of ruby colour, round,
spirituous, of delicate scent and velvety taste. The alcoholic
degree of these wines is 12º, and they must develop for 18
months, followed for a rest in bottle for at least 2 months.
Then it gains a velvety taste and becoming the ruby colour,
a puce.
The best known are: Caves Aliança, Caves S. João,
J. Maria da Fonseca, Caves Messias, Caves Acácio, Caves Primavera.
In the region is also produced an excellent 12º on
average, light, fruity and fragrant white wine.
The Viticultural Commission of Dão Region has the
control on wine's quality which is
certified by its own guarantee seal.
