This “Guide” which is part of the Algarve’s Touristic Gastronomic Passport is promoted by the “Confraria dos Gastrónomos do Algarve” (Confraternity of the Algarve’s Gastronomes), while preparing to start out a compete “Gastronomic Chart of the Region of Algarve”. In this Guide, you will find basic information on the 16 councils of the region, the interesting touristic spots, which you cannot miss out, as well as the gastronomy of each one of the sub-regions. You can also find the most paradigmatic recipes of Algarve, as well as references to restaurants, recommended by gastronomic members of the Fraternity from Algarve, in order to get to know the flavours and knowledge of our traditional cuisine.

We are faced with a quite successful and useful initiative of the Confraternity of Algarve’s Gastronomes. This Touristic Gastronomic Passport manages, in fact, to provide in a simple, synthetic and pleasant way a set of useful information to the national and foreign visitors who visit the Region.
It is at same time a practical auxiliary tool for those who wish to learn about the history, the culture, the territory and the people of Algarve and is a nice souvenir, which can be preserved and valued and can create awareness among friends.
In its pages, the visitor, the tourist or the traveler can find not only information about the cultural and tourist sights which must be visited but also about events, shows and cultural initiatives which amuse the Region. The Passport offers its holder the possibility to enjoy some advantages attributed by the sponsors.
The Passport dedicates a great part of its content to the divulgation of the Traditional Gastronomy of Algarve. It is the right option. Our Traditional Gastronomy which, since 2000, is officially Portugal’s Cultural Patrimony, is mostly manifested in Algarve. It is a direct expression of our history and culture and is throughout the country and especially in Algarve, one of the major touristic richness. There is no better passport to cause affection and create friendship and to motivate those who visit us to come back.
It is not an easy task between the infinite number of traditional recipes existing in the Region. The selection which the Confraternity of Algarve’s Gastronomes presents us is balanced, reflecting not only the variety in terms of products, dishes and ways of preparation, but also the diversity of the different places in Algarve.
Some of those recipes are very simple, Who knows if this booklet  will not become the Passport for the new connoisseur and even lovers of the Traditional Gastronomy of Algarve.
